Dairy, Egg, Gluten Free Potato Spice Cake

INGREDIENTS

  • 1 banana
  • 2/3 cup of organic coconut oil
  • 1 1/2 cups of brown sugar
  • 2 cups of buckwheat flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of rock salt
  • 2 teaspoons of cinnamon
  • 2 teaspoons of mixed spice
  • 2 cups of mashed potato
  • handful of raisins

INSTRUCTIONS

Cream sugar and oil in a large basin,when light and fluffy add the banana and all the other ingredients together. Mix well. Grease a 7inch cake tin and place in the oven at 325 or 170 for 60 mins or until golden brown.
