Quinoa lentil winter salad

INGREDIENTS

  • 50g quinoa
  • 50g green lentils
  • 1 avocado
  • 1 red and 1 orange pepper
  • 2 handfuls rocket
  • 1 lambs lettuce
  • 8 cherry tomatoes
  • handful of fresh basil leaves
  • 1/2 cucumber
  • tablespoon of flax seeds
  • tablespoon of sunflower seeds
  • 1/2 fresh lime
  • slice of fresh ginger
  • olive oil
  • salt/pepper
  • glove of garlic

INSTRUCTIONS

Place the lentils and quinoa in a saucepan of water and boil until lentils are soft and quinoa has a little tail.  About 15 mins. Drain and cool.

In a salad bowl mix all the vegetables together with the seeds. In a small bowl add the oil, salt/pepper, juice of the lime, garlic,basil and ginger.Add to the salad with the cooled quinoa and lentils. Toss all together and enjoy!
